Making soft serve ice cream from powder

Making soft serve from powder takes about five minutes of work. The only things that really matter are the ratio, full dissolving and a short rest.

Step by step

  1. Measure. 1 kg of soft serve powder and 2 litres of cold water (or 2.2 litres of cold milk). Water gives a lighter, cleaner taste; milk gives a richer, creamier result.
  2. Mix. Add the powder to the liquid and whisk or stir until it is completely dissolved. A hand blender or a mixing jug with a whisk works well. No heating is needed — the powder is cold-water soluble.
  3. Rest. Let the mix stand for at least 30 minutes. This lets the stabilisers hydrate fully and gives a smoother texture.
  4. Freeze. Pour the mix into the hopper of your soft serve machine and freeze according to the machine's instructions.
  5. Serve. Serve in cones or cups; add toppings, sauces or fruit.

Pro tips

  • Overnight in the machine: if the mix will stay in the machine overnight, prepare it with hot liquid (60–70°C). This prevents excessive thickening and helps the mix flow into the cylinder.
  • Frozen yogurt style: replace part of the liquid with plain yogurt.
  • Mix only what you need: the dry powder keeps 24 months sealed, so there is no reason to prepare more than one day's sales.
  • Opened bags: close tightly, keep cool, dark and dry and use within one month.

Troubleshooting

  • Grainy texture — the powder was not fully dissolved or the mix did not rest long enough. Mix longer and rest at least 30 minutes.
  • Mix too thick in the hopper after a night — use the hot-liquid method (60–70°C) described above.
  • Too soft or too hard — check the ratio first, then your machine's viscosity/hardness setting.

No soft serve machine?
